20 Oct History of Biscuits – From Ancient Treats to Modern Delights
The earliest recipes for biscuits date back to the 15th century, however biscuits and rusks as we know them have existed and transformed in many ways since then. The word “biscuit” derives from the words bis cotus (Latin) and means twice baked. From an early time, biscuits served functional and pleasurable roles, from serving as soldier’s rations to being enjoyed as a digestive after dinner.
A big shift for biscuits came about in the 17th century when sugar was more freely available, and was no longer only a luxury for the rich. Having access to proper ingredients gave way to a new era for biscuits, from gingerbreads being baked in Germany to macaroons in Italy. Once coffee and tea became a staple in British social scenes, biscuits again changed their role from being merely a treat to enjoy with dessert to an essential part of what would finally blossom into what we still enjoy today – afternoon tea.
By the 19th century, biscuits were being baked in many homes and to this day, we enjoy biscuits in ways that are meaningful. What was once a comfort in dire times has become a treat that brings joy to many.
